Jul 8 - Adai dollar pancakes
As South Indian dishes go, I find that the Adai tends to be a lot more heavier than the iconic Dosai (well of course it would, with equal proportions of Rice and various Lentils. The advantage is that its spiced up to the point that it does not require overnight fermentation.
I like to use leftover batter for school lunches and find that topping these 2 bite morsels with finely chopped onions tends to make it softer and more palatable when eaten 3 hours later at school. Of course, the sky's the limit when it comes to what you choose to pair the batter with. Its almost always delicious.
