Aug 15 - Berbere rice



When it comes to making flavored rice, I try not to let culinary boundary walls get in the way, and I must admit, rice is a great candidate for letting your imagination soar. Literally a blank canvas on which to brush on your choice of spice blends and vegetables.
This version had caramelized onions and peas sauteed with Ethiopian Berbere spice (deliberately omitted turmeric, to avoid making it appear like an Indian dish.
Paired with Ammini Ramachandran's recipe for a spiced Pineapple Salsa.
